Cilantro Lime Cookies!
Makes about 25 or so cookies - 30 min prep time - 10 mins of baking.
I moved Recently and doubled the recipie and gave a bunch to all my new neighbors, it was fun. There are also still enjoyable if your not a cilantro person! It cooks down a lot and just tastes herby.
Ingredienceeeee!
- 1 1/2 Cups Sugar
- 1 bunch of cilantro if storebought, a hearty handfull if homegrown.
- 2 Sticks of Butter
- 2 1/2 Cups all purpose flour. 2 cups if using a different flour variety.
- 3/4 Tsp Baking Soda
- 3/4 Tsp of Salt
- 1 Tbsp of vanilla or other extract
- 1 lime of lime zest
- 2 limes of juice (or more to taste)
- 1 egg
- 1 egg yolk
- Put sugar and cilantro in a food processor untill a consistant green mixture is formed. If you don't have a food processor, it makes no difference if you just chop the cilantro finely and add to the sugar.
- Beat butter untill soft, incorporate the cilantro sugar. Combine well. Add egg, extract, zest, lime juice. Mix well. Preheat oven to 350 Degrees.
- Once well combined, incorporate flour, salt, baking soda. Once combined, have a taste. Add any salt, lime, or cilantro to taste.
- Roll small balls out onto baking tray and freeze for a few mins. This keeps the cookies from falling compleatly flat and forming one massive pancake. Bake for 9-11 mins. I bake them untill the bottom edge turns tan.
- Let cool, and enjoy !
